Keto Mashed Green Plantains Recipe

Ingredients

  • 4 green plantains
  • 4 tablespoons butter
  • 1/4 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • salt and pepper to taste

Instructions

  1. Peel the green plantains and cut them into small pieces.
  2. Place the plantain pieces in a pot and add enough water to cover them. Bring to a boil over high heat.
  3. Reduce the heat to medium-low and let the plantains simmer for about 20-25 minutes, or until they are tender and easily pierced with a fork.
  4. Drain the water from the pot and mash the plantains with a potato masher or fork.
  5. Add the butter, heavy cream, and grated parmesan cheese to the mashed plantains and stir until well combined.
  6. Season with salt and pepper to taste. Serve and enjoy!
