Keto Meatloaf

This Keto Meatloaf recipe is incredibly moist and flavorful. And, with just a few low carb substitutions, you get to enjoy your favorite comfort food guilt free.

Ingredients

  • 2 pounds ground beef I use 85%
  • ⅔ cup grated Parmesan cheese
  • ⅔ cup Sugar-free ketchup divided
  • ½ cup onion minced
  • ½ cup almond flour
  • 3 cloves garlic minced
  • 2 whole eggs beaten
  • 2 tablespoons fresh parsley chopped
  • 1 tablespoon homemade ranch seasoning or 2 teaspoons of store bought
  • 2 teaspoons Worcestershire sauce 
  • 2 teaspoons brown monk fruit/allulose or Brown Swerve
  • ¼ teaspoon smoked paprika

Instructions

  1. Preheat oven to 350°F.
  2. Add half of the ketchup, along with the rest of the ingredients, except for the ground beef, brown sweetener and smoked paprika, into a large mixing bowl. Mix until well combined.
  3. Add in the ground beef and mix just until everything is combined. You don’t want to over mix, because it will make the meatloaf more dense and tough.
  4. Add the mixture into a 9 x 5 loaf pan that’s been sprayed with nonstick spray. Bake for 35 minutes, then remove from the oven.
  5. Mix together the remaining ketchup, brown sweetener and smoked paprika then spread over the meatloaf. Continue baking for another 20 minutes, then allow to rest 10 minutes before slicing.
  6. Note: If you want the sauce to be on all sides of the meatloaf and are daring enough, you can CAREFULLY remove the meatloaf from the pan and place onto a mini baking sheet lined with parchment paper. Then slather the mixed all over and bake.

Notes

  • If you don't have the ingredients to make the ranch seasoning, you can use 2 teaspoons of the store bought packet.
  • If you don't have a Keto friendly brown sweetener, you can omit it.
  • If you don't have smoked paprika, you can just omit it.
  • If you don't have fresh parsley, you can use 1 tablespoon of dried parsley instead.
  • I always recommend grating your own parmesan cheese, for the best flavor.  Parmesan cheese can easily be substituted with grated Romano or Asiago cheese or even a combination of them.
