Ingredients

  • 1/4 cup butter
  • 1/2 cup granulated Swerve sweetener
  • 1 cup roasted salted peanuts
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking soda

Instructions

  1. Line a baking sheet with parchment paper. Set aside.
  2. In a heavy-bottomed saucepan, melt the butter over medium heat.
  3. Add the Swerve sweetener to the pan and stir until it dissolves.
  4. Add the peanuts and continue stirring for about 5-7 minutes, until the peanuts are toasted and the mixture turns golden brown.
  5. Remove the saucepan from the heat and stir in the vanilla extract, salt, and baking soda. The mixture will bubble up, so be careful.
  6. Quickly pour the mixture onto the prepared baking sheet and use a spatula to spread it out into an even layer.
  7. Let the peanut brittle cool for about 30 minutes, or until it has hardened.
  8. Break the peanut brittle into pieces and store in an airtight container.
