Ingredients

  • ½ cup shredded Mozzarella cheese
  • 1 whole egg beaten
  • 1 ½ tablespoons pumpkin puree
  • ½ teaspoon Swerve confectioners
  • ½ teaspoon vanilla extract
  • ¼ teaspoon pumpkin pie spice see my recipe
  • ⅛ teaspoon pure maple extract see notes
  • Optional: Roasted pecans cinnamon, whip cream and Sugar-Free Maple Syrup for topping

Instructions

    Cup of Yum
  1. Turn on your Waffle Maker, (mine makes 4" waffles) and start preparing the batter.
  2. Add in all the ingredients, except for the mozzarella cheese to a bowl and whisk. Add in the cheese and mix until well combined.
  3. Spray your waffle plates with nonstick spray (I used coconut oil) and add in half the batter to the center. Close the lid and cook for 4-6 minutes, depending on how crispy you want your Chaffles.
  4. Remove and cook the second Chaffle. Serve with all or any combination of toppings including butter, Sugar-Free Maple Syrup, roasted pecans, a dusting of ground cinnamon and a dollop of whip cream.

Notes

  •  If you don't have pure maple extract, you can just omit it from the recipe and they will taste great!
  • *Makes 1 serving of 2 Chaffles .  Macros do not include optional toppings.
