Ingredients

For the Scones
  • 2 ⅓ cups almond flour
  • ¼ cup oat fiber
  • ½ cup pumpkin puree
  • ½ cup brown monk fruit/allulose
  • 1 whole egg
  • 2 tablespoons butter melted
  • 2 teaspoons sugar-free maple syrup
  • 2 teaspoons baking powder
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon vanilla extract
For the Glaze
  • ¼ cup monk fruit/allulose powdered
  • 1 ½ tablespoons heavy cream or as needed
  • 1 teaspoon sugar-free maple syrup

Instructions

  1. Preheat oven to 350°F.
  2. Add the almond flour, oat fiber, pumpkin pie spice and baking powder into a mixing bowl and whisk until combined.
  3. In a separate bowl, mix together the monk fruit/allulose, eggs, butter, vanilla and pumpkin puree.
  4. Add in the dry ingredients and mix with silicone spatula, just until combined.
  5. Turn the dough out onto a baking sheet lined with parchment paper forming a disc about 1 inch thick and 6 inches in diameter.
  6. Cut the disc into 8 wedges (like a pizza), then gently separate the slices about an inch apart.
  7. Bake for 18-20 minutes or until the tops are slightly golden, then set aside to cool.
  8. Whisk together the icing ingredients, adding just enough heavy cream to get a consistency that allows you to drizzle it.
  9. Once the scones have cooled completely, drizzle the icing over the tops and serve.
