Ingredients
For the Scones
- 2 ⅓ cups almond flour
- ¼ cup oat fiber
- ½ cup pumpkin puree
- ½ cup brown monk fruit/allulose
- 1 whole egg
- 2 tablespoons butter melted
- 2 teaspoons sugar-free maple syrup
- 2 teaspoons baking powder
- 2 teaspoons pumpkin pie spice
- 1 teaspoon vanilla extract
For the Glaze
- ¼ cup monk fruit/allulose powdered
- 1 ½ tablespoons heavy cream or as needed
- 1 teaspoon sugar-free maple syrup
Instructions
- Preheat oven to 350°F.
- Add the almond flour, oat fiber, pumpkin pie spice and baking powder into a mixing bowl and whisk until combined.
- In a separate bowl, mix together the monk fruit/allulose, eggs, butter, vanilla and pumpkin puree.
- Add in the dry ingredients and mix with silicone spatula, just until combined.
- Turn the dough out onto a baking sheet lined with parchment paper forming a disc about 1 inch thick and 6 inches in diameter.
- Cut the disc into 8 wedges (like a pizza), then gently separate the slices about an inch apart.
- Bake for 18-20 minutes or until the tops are slightly golden, then set aside to cool.
- Whisk together the icing ingredients, adding just enough heavy cream to get a consistency that allows you to drizzle it.
- Once the scones have cooled completely, drizzle the icing over the tops and serve.
