  1. Preheat the oven to 200C / 400F electric or 180C / 350F fan.
  2. Place the spinach in a large bowl. Cover and microwave on high for 3 minutes until wilted. Alternatively, let the spinach leaves wilt in a pan with a splash of water.

  4. Chop the spinach and add it to a large mixing bowl along with all the remaining ingredients - eggs, cheddar and parmesan, almond flour, psyllium husk, garlic powder, onion powder, black pepper, parsley and ½ tablespoon olive oil. Mix until combined.
  5. Roll the mixture into balls and place on a baking tray lined with parchment paper. Spray the spinach balls with a little olive oil.
  6. Bake for 20 - 23 minutes until golden on top, turning after 15 - 18 minutes.

  • 5g net carbs per spinach ball. Makes 18 spinach balls. Serves 6 people as an appetizer or snack (1.5g net carbs / 3 balls per serve).

  • Optional: Add a touch of salt to the mixture. I did not feel the need because the cheese is salty in itself.
