These gluten free keto spinach balls are great for when you’re feeling a bit peckish. They also make a fabulous keto appetizer. Only 0.5g net carbs per spinach ball.

Ingredients
- 6 cups Fresh Spinach Leaves 200g. Makes ⅔ cup (130g) packed cooked spinach ***see notes
- 3 large eggs beaten
- ⅔ cup grated cheddar 75g
- ⅓ cup grated parmesan 25g
- 1 cup almond flour
- 2 tablespoon whole psyllium husk or 1 tablespoon psyllium husk powder
- ⅓ teaspoon garlic powder
- ½ teaspoon onion powder
- ⅓ teaspoon black pepper
- ¼ cup fresh parsley chopped (15g)
- 1 tablespoon olive oil ½ in the mix and ½ on top
Instructions
- Preheat the oven to 200C / 400F electric or 180C / 350F fan.
- Place the spinach in a large bowl. Cover and microwave on high for 3 minutes until wilted. Alternatively, let the spinach leaves wilt in a pan with a splash of water.
- Allow to cool, then squeeze out the water using your hands, a muslin cloth or use strong kitchen roll. You should be left with ⅔ cup (130g) cooked spinach.
- Chop the spinach and add it to a large mixing bowl along with all the remaining ingredients - eggs, cheddar and parmesan, almond flour, psyllium husk, garlic powder, onion powder, black pepper, parsley and ½ tablespoon olive oil. Mix until combined.
- Roll the mixture into balls and place on a baking tray lined with parchment paper. Spray the spinach balls with a little olive oil.
- Bake for 20 - 23 minutes until golden on top, turning after 15 - 18 minutes.
Notes
- 5g net carbs per spinach ball. Makes 18 spinach balls. Serves 6 people as an appetizer or snack (1.5g net carbs / 3 balls per serve).
- ***You can also use frozen spinach, just cook the same way and measure the quantity.
- Optional: Add a touch of salt to the mixture. I did not feel the need because the cheese is salty in itself.

- Option to use the air fryer. Air fry at 180C / 350F for about 17-20 minutes.
