Keto Walnut Cookies combine coarsely ground walnuts with cinnamon and a sweetener to create a nutty, slightly spiced cookie. The mix of egg or egg white binds the dough, while baking produces a golden brown, crisp texture. These cookies can be made richer with whole egg or crisper using just the egg white, offering flexibility. Their low net carb content makes them suitable for ketogenic diets, and their crunchy yet tender texture makes them a practical treat that holds well stored.
Ingredients
- 175 g / a generous 1 ½ cups walnut coarsely ground
- 1 egg or 1 large egg white, medium
- 25 g / 2 heaped tablespoons powdered sweetener or more, to taste
- 1 teaspoon cinnamon
Instructions
- Preheat the oven to 180 Celsius / 350 F electric or 160C / 320F fan.
- Beat the egg with the sweetener and cinnamon until smooth.
- Stir in the ground walnuts. Taste and add more sweetener if preferred.
- Form cookie dough balls and place on a baking sheet lined with parchment paper.
- Bake for 10 minutes or until golden brown.
Notes
- Using a whole egg gives a richer cookie, while egg whites yield a crisper texture.
- Substitute walnuts with pecans, almonds, or hazelnuts for variety.
- Optional additions: 1 tablespoon butter, vanilla extract, and a pinch of salt to enhance flavor.
- Store baked cookies airtight up to two weeks; freeze for up to three months.
