Key Lime Pie Energy Bites
These energy bites combine chopped almonds, dates, walnuts or pecans, shredded coconut, and fresh lime zest and juice into small, bite-sized balls. The mixture mimics a cookie dough-like texture that is rolled and coated with coconut, giving a refreshing citrus twist reminiscent of key lime pie. They offer a portable and naturally sweet snack option with a tropical flavor accent.
Ingredients
- ½ cup almond raw unsalted
- 1 cup dates unsweetened, pitted
- ¼ cup walnuts or pecans, for baking
- ⅓ cup coconut plus extra for topping, shredded, unsweetened
- lime zest of 1
- 1/4-1/3 up lime juice (approx. 2 limes)
- ⅛ tsp salt
OPTIONAL EXTRAS
- 1-2 TBSP honey if desired, or maple syrup, to sweeten
- lime if desired, extra zest
Instructions
- First add your almonds to a food processor
- Pulse a few times until roughly chopped.
- Add the remaining ingredients and blend/pulse to form a cookie dough-like consistency. You may need to push the mixture off the sides of the processor and towards the blades once or twice depending on your processor.
- Blend to desired texture [I like them a little bit chunky] and move mixture to a cutting board. If it's too sticky to handle, feel free rub a little coconut oil on yours hands while you roll your energy bites.
- Roll into bite-sized balls, then roll in shredded coconut for a burst of tropical goodness!

- Use freshly squeezed lime juice if key limes are unavailable to achieve authentic flavor.
- The recipe typically yields 10-12 energy bites, though portions can vary if sampling the mixture during preparation.
- Store in an airtight container for up to 4 days or freeze for longer preservation.
