KFC Potato and Gravy

KFC Potato and Gravy is a creamy mashed potato dish made from starchy potatoes that are boiled until falling apart, then passed through a ricer or masher to create a soft texture. Butter, cream, and milk are gently incorporated to produce a rich, smooth mash seasoned simply with salt and freshly ground pepper. The potatoes are served topped with a homemade KFC-style gravy, making a comforting side that complements fried chicken or other main dishes.

Ingredients

  • 1 batch gravy homemade, KFC style
  • 1.5kg/ 3lb potato or other starchy potatoes, Sebago (Aus dirt brushed), Russet (US), Maris Piper (UK
  • 1 tbsp salt (for water)
  • 75g (5 tbsp) unsalted butter cubed
  • 1/2 cup (125ml) cream heavy or thickened
  • 3/4 cup (185ml) milk full fat
  • black pepper freshly ground
  • salt to taste

Instructions

  1. Peel and cut potatoes into 3cm / 1.25" cubes.
  2. Place in a pot, add 1 tbsp salt and water so it's 5cm / 2" above potatoes.
  3. Bring water to a boil, then boil for 15 minutes until potatoes are very soft and starting to fall apart.
  4. Drain, leave in colander to steam dry for 3 minutes.
  5. Meanwhile, melt butter in a saucepan over medium high heat. Add cream and milk, heat until just before simmer - do not let it boil. Remove from stove.
  6. Pass potato through a potato ricer (Note 1) or use a masher with holes. Do not use beater - will make it dense.
  7. Add hot milk mixture, 1/2 tsp salt and 1/4 tsp pepper. GENTLY stir until mixed through.
  8. Taste for salt and pepper, add more if needed.
  9. Transfer into serving bowl. Pour over Gravy and serve immediately with anything and everything!
  10. For a KFC at home experience, serve with homemade Fried Chicken (it's better than KFC!)

Notes

  • Using a potato ricer ensures a very soft and creamy texture without lumps.
  • If using a masher, choose one with holes to approximate the ricer's effect.
  • Avoid handheld beaters as they can make the mash dense and heavy.
