KFC Potato and Gravy
Description
KFC Potato and Gravy features cubed starchy potatoes, such as Russet or Maris Piper, boiled until very soft and partially falling apart. After draining and steaming dry, the potatoes are pressed through a potato ricer or a masher with holes to create a tender, fluffy base. A hot mixture of melted unsalted butter combined with cream and whole milk is folded gently into the potatoes, along with salt and freshly ground black pepper, to enhance richness and flavor. This careful technique avoids over-mixing which can make the mash dense.
The slightly whipped, creamy mashed potatoes are then served immediately with homemade KFC-style gravy poured over. The dish offers a smooth texture and delicate seasoning that pairs well with fried or roasted meats, making it a comforting traditional side.
For best results, using a potato ricer helps achieve the softest, lump-free consistency. Avoid beaters, which can make the mash dense and heavy instead of creamy.
Ingredients
- 1 batch gravy homemade, KFC style
- 1.5kg/ 3lb potato or other starchy potatoes, Sebago (Aus dirt brushed), Russet (US), Maris Piper (UK
- 1 tbsp salt (for water)
- 75g (5 tbsp) unsalted butter cubed
- 1/2 cup (125ml) cream heavy or thickened
- 3/4 cup (185ml) milk full fat
- black pepper freshly ground
- salt to taste
Instructions
- Peel and cut potatoes into 3cm / 1.25" cubes.
- Place in a pot, add 1 tbsp salt and water so it's 5cm / 2" above potatoes.
- Bring water to a boil, then boil for 15 minutes until potatoes are very soft and starting to fall apart.
- Drain, leave in colander to steam dry for 3 minutes.
- Meanwhile, melt butter in a saucepan over medium high heat. Add cream and milk, heat until just before simmer - do not let it boil. Remove from stove.
- Pass potato through a potato ricer (Note 1) or use a masher with holes. Do not use beater - will make it dense.
- Add hot milk mixture, 1/2 tsp salt and 1/4 tsp pepper. GENTLY stir until mixed through.
- Taste for salt and pepper, add more if needed.
- Transfer into serving bowl. Pour over Gravy and serve immediately with anything and everything!
- For a KFC at home experience, serve with homemade Fried Chicken (it's better than KFC!)
Notes
- Using a potato ricer ensures a very soft and creamy texture without lumps.
- If using a masher, choose one with holes to approximate the ricer's effect.
- Avoid handheld beaters as they can make the mash dense and heavy.
