Ingredients

  • 200 g gram flour
  • 1 tsp sugar
  • 1/2 tsp turmeric powder
  • 1 tsp lemon juice
  • 1 tsp salt
  • 1 tsp Eno fruit salt
  • 2 tbsp oil
  • 1/2 tsp mustard seeds
  • 1/2 tsp cumin seeds
  • 1/2 tsp sesame seeds
  • 1-2 green chilies Chopped
  • 1/2 inch ginger Grated
  • 1 pinch asafoetida
  • 2-3 curry leaves
  • Coriander Chopped for garnish

Instructions

  1. In a mixing bowl, add gram flour, sugar, turmeric powder, lemon juice, and salt. Mix them well.
  2. Add water gradually and whisk to form a smooth batter. Ensure there are no lumps.
  3. Grease a steaming dish or a thali with oil.
  4. Add Eno fruit salt to the batter and mix gently. You'll see it froth up.
  5. Immediately pour the batter into the greased dish.
  6. Steam the batter for about 15-20 minutes or until a toothpick inserted comes out clean.
  7. Once done, let it cool down for a while and then cut it into squares or diamonds.
  8. In a small pan, heat 2 tablespoons of oil. Add mustard seeds and let them splutter.
  9. Add cumin seeds, sesame seeds, green chilies, ginger, asafoetida, and curry leaves. Sauté for a minute.
  10. Pour this tempering over the steamed dhokla pieces.
  11. Garnish with chopped coriander leaves.
  12. Serve the Khaman Dhokla with green chutney or tamarind chutney.

Notes

  • You can adjust the green chilies as per your spice preference.
  • Make sure to use Eno fruit salt to achieve the spongy texture of dhokla.
