Ingredients
- 200 g gram flour
- 1 tsp sugar
- 1/2 tsp turmeric powder
- 1 tsp lemon juice
- 1 tsp salt
- 1 tsp Eno fruit salt
- 2 tbsp oil
- 1/2 tsp mustard seeds
- 1/2 tsp cumin seeds
- 1/2 tsp sesame seeds
- 1-2 green chilies Chopped
- 1/2 inch ginger Grated
- 1 pinch asafoetida
- 2-3 curry leaves
- Coriander Chopped for garnish

Instructions
- In a mixing bowl, add gram flour, sugar, turmeric powder, lemon juice, and salt. Mix them well.
- Add water gradually and whisk to form a smooth batter. Ensure there are no lumps.
- Grease a steaming dish or a thali with oil.
- Add Eno fruit salt to the batter and mix gently. You'll see it froth up.
- Immediately pour the batter into the greased dish.
- Steam the batter for about 15-20 minutes or until a toothpick inserted comes out clean.
- Once done, let it cool down for a while and then cut it into squares or diamonds.
- In a small pan, heat 2 tablespoons of oil. Add mustard seeds and let them splutter.
- Add cumin seeds, sesame seeds, green chilies, ginger, asafoetida, and curry leaves. Sauté for a minute.
- Pour this tempering over the steamed dhokla pieces.
- Garnish with chopped coriander leaves.
- Serve the Khaman Dhokla with green chutney or tamarind chutney.
Notes
- You can adjust the green chilies as per your spice preference.
- Make sure to use Eno fruit salt to achieve the spongy texture of dhokla.
