Kheer: Indian Rice Pudding Recipe

Ingredients

Rice pudding ingredients:
  • 13.5 oz coconut milk 1 can
  • 2 cups milk whole
  • 3 tbsp sugar granulated
  • ½ cup basmati rice rinsed
  • ½ tsp ground cardamom separate the seeds from the pods and grind
  • ½ tsp rosewater
  • ¼ cup raisins
Garnish:
  • ¼ cup pistachios shelled and chopped
  • ¼ cup almonds toasted and chopped

Instructions

  1. Place the coconut milk, whole milk and sugar in a large sauce pan.
  2. Heat on medium-high until the mixture comes to a boil while stirring frequently.
  3. While heating the liquid, rinse the rice in a colander until the water runs clear, set aside and allow to drain.
  4. Once the liquid boils reduce the heat to low-medium and add the rice.
  5. Simmer for 20 minutes and stir frequently. Do not allow to boil.
  6. Once the mixture is thick add the raisins, cardamom and rosewater. Simmer for a 3-5 minutes to allow the raisins to get soft and the flavors to combine.
  7. Serve in bowls and top with chopped almonds and pistachios.
