Ingredients

Strawberry Salad
  • 6 cups arugula fresh, bite-size pieces, mix
  • 6 cups spinach fresh, bite-size pieces, mix
  • 1 cup strawberry diced
  • 2-3 pieces kiwifruit cut into bite-size pieces
Lime & Honey Dressing
  • 1 tablespoon lime juice
  • 2 tablespoons honey
  • 1 1/2 tablespoons olive oil
  • 1/3 - 1/2 teaspoon ground ginger

Instructions

  1. In large bowl, mix spinach, strawberries, kiwifruit.
  2. In tightly covered container, shake dressing ingredients until smooth. Pour over salad; toss to mix.
  3. Top with toasted pecans and cheese is desired,

Notes

  • Add Gouda cheese or another mild cheese to introduce creaminess if desired.
