Kiwi and Raspberry Chia Pudding

Kiwi and Raspberry Chia Pudding is naturally sweet and creamy. Make it ahead and keep it in the fridge for a quick and healthy snack anytime. {vegan, gluten-free, paleo, whole30, dairy free}

Ingredients

  • Chia layer:
  • ½ cup chia seeds
  • 1 ½ cup coconut milk
  • Pink Layer:
  • 1 cup frozen raspberries
  • ¼ cup coconut milk
  • 1 banana
  • Green Layer:
  • 1 banana
  • 1 cup spinach
  • 2 kiwis
  • 3 pieces of ice or more
  • 2 tablespoon coconut milk

Instructions

    Cup of Yum
  1. First, stir together the chia seeds and 1 ½ cups milk.
  2. Place in fridge for at least two hours to set. When set proceed with recipe.
  3. Place the chia pudding layer in the bottom of two glasses.
  4. For pink layer, mix all ingredients in a high-powered blender. You want the mixture to be thick so the colors don't run together when you layer them in your glass.
  5. Gently pour the pink layer over top of chia layer.
  6. For green layer, mix all ingredients in a high-powered blender.
  7. Gently pour green layer on top of the pink layer.
  8. Top with sliced fruit.
  9. This makes two big servings or four small servings.
  10. If you need more sweetness add 1 tablespoon maple syrup to one of the layers.
