Kiwi Syrup

Ingredients

  • 4 kiwi ripe
  • 1 cup white granulated sugar 200g
  • ¾ cup water 180ml

Instructions

  1. Peel the kiwis and cut into chunks.
  2. Add all ingredients to a small pot.
  3. Stir it together, bring to the boil, then reduce the heat and simmer for 10 minutes.
  4. Allow the mixture to cool slightly. Place a fine-mesh strainer over a bowl or jug and pour in the mixture. Lightly press the kiwis into the strainer to extract the juice, but don't press too hard or your syrup could have 'kiwi bits' in it.
  5. Allow the mixture to cool, then pour into a jar or bottle and keep in the fridge for up to 1 week.

Notes

  • Use ripe kiwis for the best flavor. Ripe kiwis are slightly soft to the touch and have a vibrant green color.
  • Gently press the kiwi chunks against the strainer while extracting the syrup to ensure you get the maximum amount of flavor, but not hard enough to get bits of kiwi in the syrup. Strain again if necessary.
  • Feel free to double or halve the recipe depending on your needs. Just ensure the ratio of ingredients remains consistent.
