Korean Beef Stuffed Peppers

Korean Beef Stuffed Peppers are an easy tasty Asian style dish with a tangy, saucy spicy ground beef mixture baked in bell pepper pockets.

Ingredients

  • 3 bell peppers , halved
  • 1 1/2 pounds ground beef , 85/15 fat content
  • 1 teaspoon kosher salt
  • 1/2 teaspoon coarse ground black pepper
  • 3 cloves garlic , minced
  • 2 teaspoons sesame oil
  • 1/2 cup ketchup
  • 1/2 cup hoisin
  • 1/2 cup water
  • 2 tablespoons low sodium soy sauce
  • 1 tablespoon rice wine vinegar
  • 1/2 teaspoon Sriracha
  • 2 cups beef broth
  • 1 tablespoon white sesame seeds
  • 2 green onions , sliced thinly

Instructions

  1. Preheat oven to 375 degrees.
  2. Add ground beef, salt, and pepper on medium-high heat and cook, breaking it apart, until well browned.
  3. Drain any excess grease.
  4. Add in the garlic, sesame oil, ketchup, hoisin, water, soy sauce, rice wine vinegar, and sriracha.
  5. Stir well and bring to a simmer then turn off the heat.
  6. Add the peppers to a 9x13 baking dish.
  7. Scoop mixture into the halved green bell peppers.
  8. Pour beef broth on the sides of the bell peppers.
  9. Bake, covered, for 50 minutes.
  10. Garnish when serving with green onions and sesame seeds.
