Ktipiti (Tirokafteri)

Ktipiti, tirokafteri or kopanisti is a delicious Greek meze (appetizer) prepared with feta cheese and roasted red bell peppers.

Ingredients

  • 1 red bell pepper
  • ½ lb feta , crushed with a fork
  • 4 tablespoons Greek yogurt (sheep's milk)
  • 1 clove garlic , degermed
  • ¼ teaspoon paprika
  • 2 prigs Dill , finely chopped
  • ¼ teaspoon oregano
  • 3 leaves mint , chopped
  • 3 tablespoons olive oil
  • Juice of half a lemon
  • salt
  • pepper

Instructions

  1. Roast the bell pepper over a flame or in the oven until the skin is blistered.
  2. Place it in a container with an airtight lid or in a freezer bag and allow to cool.
  3. Once the pepper is cold, peel, seed, finely chop with a knife and drain well in a colander.
  4. Crush the garlic in a mortar with a little salt until it forms a paste.
  5. In a bowl, crush and beat the feta until creamy.
  6. Add the yogurt, garlic, paprika, and herbs. Mix well.
  7. Season with lemon juice and olive oil. Season with salt and pepper. Mix well.
  8. Refrigerate for at least two hours before eating.

Notes

  • Watch out for the saltiness, as the feta is already quite salty.
  • The pepper should be very well drained to remove most of the excess moisture.
  • Serve the ktipiti with toasts, blinis, or vegetable sticks (eg carrots, peppers, cucumbers).
