Kuih Kodok (Malaysian Mashed Banana Fritters)

Kuih Kodok are fried banana fritters made by mashing ripe bananas with flour, an egg, and sugar to form a batter. The batter drops are deep-fried until golden and crispy outside, yielding soft, sweet bites with a mild chew, traditionally served warm as a snack or dessert.

Description

Kuih Kodok, a Malaysian mashed banana fritter variation, uses mashed bananas combined with flour, egg, and sugar to create a batter. This batter is spooned into hot cooking oil and deep-fried until the exterior turns golden brown and crisp while the inside remains tender and slightly chunky from the banana. The addition of egg, though not traditional, helps bind the batter and enrich the fritters.

The fritters offer a balance of sweetness from the bananas and sugar with a slight crispness from frying. Served warm, they are suitable as a snack or dessert. The egg version adds a richer texture compared to the traditional recipe that omits the egg.

For an authentic Malaysian version, use pisang awak bananas if available and omit the egg from the batter. The neutral cooking oil helps fry the fritters evenly without affecting their flavor.

Ingredients

Servings
  • 3 banana dole, peeled
  • 1/2 cup all-purpose flour
  • 1 egg
  • 1/2 tablespoon sugar or to taste
  • neutral cooking oil for deep frying, generic cooking oil

Instructions

  1. In a large bowl, mash the bananas with the back of a fork until small chunks form. Add the flour, egg, and sugar, and mix all the ingredients well to form a batter.
  2. Heat a frying pan and add enough cooking oil for deep frying. Once the oil is heated, drop a spoonful of batter into the frying pan, shaping it into a somewhat round form. Deep-fry the fritters until golden brown.
  3. Remove the fritters using a strainer and drain them on paper towels. Serve warm.

Notes

  • This version includes egg for a richer batter; omit the egg for the traditional Malay recipe.
  • Using pisang awak bananas provides authentic flavor when available.
  • Fry in neutral oil suited for deep frying to brown the fritters evenly.
