Ladyfinger Lemon Cake All is so easy! You need two boxes of Lemon Pie Filling and Dessert Mix, the ingredients required and a big bag of lady fingers.

Ingredients

  • 2 packages ladyfingers instead of a pie crust
  • 2 packages Shirriffs Lemon Pie Filling and Dessert Mix made according to package directions

Serving Suggestions

  • Whipped Cream
  • berries, any kind
  • icing or powdered sugar - for dusting

Instructions

  1. Grease bottom and sides of a spring form pan.
  2. Line bottom and sides with lady fingers, pretty side out! You know, the sugar side!
  3. Prepare both packages of Lemon Pie Filling according to package directions. I use Shirriff's brand Lemon Pie Filling and Dessert Mix but any brand will do!
  4. Wait 5 minutes and make meringue from 2 egg whites, (directions on side of pie filling).
  5. Fold meringue into pie filling.
  6. Let set in the fridge overnight.
  7. Serve with whipped cream, berries or a dusting of powdered sugar. Enjoy!
