Ingredients
- 3 eggs
- 100 g caster sugar
- 1 tsp vanilla extract
- 100 g plain flour
- salt
- icing sugar
Instructions
- Preheat your oven to 180°C (160°C fan). Line two baking sheets with parchment paper.
- In a large mixing bowl, crack the eggs and add the caster sugar. Whisk them together until the mixture becomes pale and fluffy.
- Stir in the vanilla extract.
- Sift the plain flour and a pinch of salt into the egg mixture. Gently fold the flour into the eggs until well combined. Be careful not to overmix; you want a light and airy batter.
- Transfer the batter to a piping bag fitted with a plain round tip (about 1.5 cm in diameter).
- Pipe the batter onto the prepared baking sheets in finger-like shapes, each about 7-8 cm long. Leave some space between each ladyfinger.
- Bake in the preheated oven for 12-15 minutes or until the ladyfingers are golden and firm to the touch.
- Remove them from the oven and let them cool on a wire rack.
- Once cooled, you can dust the ladyfingers with icing sugar if desired.
