Lasagna Casserole Recipe

Quick, easy Lasagna Casserole recipe that has all the flavor of traditional lasagna but is so much easier! Layers of meat sauce, pasta and cheese!

Ingredients

  • 1 lb ground pork sausage
  • ¼ c. onion chopped
  • 2 cloves garlic minced
  • 1 jar pasta sauce 24 oz
  • ½ tsp salt
  • ½ tsp pepper
  • 1 lb mafalda pasta
  • 2 eggs slightly beaten
  • 2 c. shredded Mozzarella cheese divided
  • 2 c. cottage cheese
  • ⅓ c. Parmesan Cheese
  • 1 Tbsp dried parsley flakes

Instructions

  1. Preheat oven to 350 degrees F.
  2. In a large skillet brown sausage and onion about 7-10 minutes or until cooked through. During last minute of cooking add in minced garlic and cook for and additional minute or until fragrant. Drain grease off sausage mixture.
  3. Add pasta sauce, salt and pepper to skillet. Simmer for 5 minutes.
  4. While you are browning sausage cook pasta to al dente following directions on box. Drain and set aside.
  5. In a large bowl combine eggs, 1 c. Mozzarella cheese, cottage cheese, Parmesan cheese and Parsley flakes. Stir until combined. Add pasta to mixture and stir until combined
  6. Lightly spray a 9’’ x 13’’ casserole dish with non-stick spray. Spread pasta mixture on bottom of casserole dish. Top with meat mixture and then sprinkle remaining Mozzarella cheese over the top. Cover with foil.
  7. Place casserole in preheated oven. Bake for 30 minutes or until bubbling around edges and cheese is melted.
  8. Remove from oven, let sit 5-10 minutes and then serve.

Notes

  • aluminum foil or plastic wrap.
  • FRIDGE: If stored correctly, leftover casserole will last in the refrigerator for about 3 days.
  • FREEZER: You can freeze an unbaked lasagna casserole. However, baked casserole may not reheat well after being frozen.
  • For best results, reheat in the oven. But you can also reheat on the stovetop or in the microwave.
