The classic Tom Collins is a sparkling lemonade with the addition of gin (or vodka). Cool and refreshing, it’s even more fun as a Lavender Collins.

Ingredients
- 1 1/2 ounces gin or vodka for a mocktail use extra sparkling water
- 1 ounce lemon juice
- 1 ounce Lavender syrup such as Torani
- Ice cubes
- 3 ounces sparkling water or to taste
- My garnishes: lemon slices mint leaves, berries, lemon balm flowers

Instructions
- Pour lavender syrup, lemon juice and alcohol into the bottom of a tall glass. Top with ice, then add club soda or other sparkling water.
