Ingredients

Taco Dip
  • 2 cans refried beans 15-ounce each
  • 2 cups sour cream
  • 1 brick cream cheese softened
  • 1 packet taco seasoning 1 ounce
  • 2 cups Mexican blend cheese
  • 1 1/2 cups salsa
  • 1/4 cup green onions sliced
Flag Design
  • 6-8 roma tomatoes diced
  • 1 deli slice Monterey Jack or mozzarella cheese
  • 1 ½ cups Monterey jack cheese shredded
  • 1 cup blue tortilla chips crushed

Instructions

    Cup of Yum
  1. Spread the refried beans out evenly in the bottom of a 9x13 baking dish.
  2. In a mixing bowl, combine the sour cream, softened cream cheese, and taco seasoning until well mixed. Layer on top of the beans.
  3. Next, add the salsa layer.
  4. Next, add the shredded Mexican blend cheese and scallions.
  5. You can stop and serve it here if you don't want to make the flag design.
  6. Use a small 1 1/2-inch cookie cutter to make five stars in the sliced cheese.
  7. Add crushed blue corn chips to the corner of the pan, then add stars on top.
  8. Beginning and ending with the tomatoes, rotate rows of chopped tomatoes and shredded cheese to form the stripes.

Notes

  • Thoroughly soften the cream cheese before mixing it with the sour cream and taco seasoning.
  • Use a spatula to smooth out the refried beans, creamy mixture, and salsa. That way, every bite has a bit of everything.
  • Adjust the heat level to suit your taste. If you like it spicy, use a hot salsa and add some chopped jalapeños to the creamy layer. Stick to mild salsa and skip the extra heat for a milder dip.
  • The flag design is a fun and festive touch, especially for summer gatherings. But it will still be delicious if you don't feel like making the topping!
