Leek Cheese Soup (Käsesuppe)

Try this German Käsesuppe or leek cheese soup recipe. With sauteed ground meat and blue cheese. It is so simple yet so deliciously creamy and hearty!

Ingredients

  • 3 tablespoons vegetable oil
  • ¾ pound mixed ground pork/beef
  • 1 large leek - chopped
  • 7 fluid ounces all-purpose cream
  • 3 ounces cream cheese
  • 3 ounces soft blue cheese
  • 1 cup milk (optional)
  • salt & pepper - to taste

Instructions

  1. In a deep pan or pot, heat oil over medium heat.
  2. Saute the ground meat until just cooked.
  3. Add the leeks and cook covered for 3 minutes.
  4. Pour in the cream and add the cream cheese and blue cheese. Mix well until all the cheeses have melted. Add milk if it becomes too thick.
  5. Season with salt and pepper. Let it simmer until the leeks become tender
