Leftover ham and cheese puff pastry pies

Easy ham and cheese puff pastry pies made with leftover Christmas ham and cheese is a delicious recipe for the day after Christmas.

Ingredients

  • 400 g (14oz) puff pastry thawed
  • 2-3 cups leftover ham / gammon cubed
  • 2 cups grated cheese
  • ½ cup onion marmalade
  • 2 eggs beaten
  • 2 tbsp sesame seeds

Instructions

  1. Preheat the oven to 180°C/350°F.
  2. Slice the ham into thin slices then cube.
  3. Grate or finely dice any cheese you are using and mix together.
  4. Roll out the thawed puff pastry into a large rectangle on a floured surface then slice into 6 squares.
  5. Place a teaspoon of onion marmalade onto the pastry then add a generous handful of filling.
  6. Brush the edges with beaten egg. Fold the one corner of pastry over to the opposite side and seal the edges by crimping with a fork.
  7. Brush the tops of the pastries with egg and scatter over sesame seeds.
  8. Place onto a greased baking sheet (or use parchment paper) and place in a preheated oven. Bake for 15-20 minutes until golden brown and cooked through.
  9. Remove from the oven and allow to cool for 10 minutes before serving.
