Leftover Prime Rib Beef Dips

Use your leftover prime rib (or other sliceable beef roast) to make beef dip sandwiches. This method yields tender beef and perfect au jus!

Ingredients

  • 12 slices prime rib (slices should be as thin as possible)
  • 1 package au jus mix
  • 4 French Rolls
  • 1/4 cup butter
  • 1/2 teaspoon garlic powder
  • 8 slices Swiss cheese

  1. Prepare the au jus packet according to the instructions. Once done, keep warm on low heat on the stove. Turn your oven on to broil.
  2. Slice the rolls through the middle, but not slicing all the way through. Leave one part of the bun attached so it can hold the meat and cheese.
  3. Combine the butter and the garlic powder. Slather each cut side of the rolls with the garlic butter. Place on a cookie sheet, butter side up.
  4. Broil the buns until the butter is browned and the edges crispy. Remove from the oven.
  5. Take the beef slices and place them into the still hot au jus. Make sure that the meat is submerged. Heat in the au jus for 2 minutes.
  6. With a pair of tongs, remove the meat slices, letting excess au jus drip back into the pot, and divide between the 4 rolls evenly.
  7. Top each bun with 2 slices of Swiss cheese. Return to the oven and broil until the cheese is melted. Remove and plate.
  8. Split the au jus into four small bowls and serve with the beef dips.

Notes

  • Portuguese rolls that are longer also work. The bread needs to be a dense, thickly crusted bread to hold the sandwich together while dipping.

  • If desired, add horseradish to the rolls after you browned the butter on top. Then add your beef and continue making them.
