Leftover Turkey Hand Pies

Ingredients

  • 2.5 cups leftover turkey
  • 1 tbsp olive oil
  • 1/2 onion chopped finely
  • 3 cloves garlic minced or grated
  • 2 heets puff pastry
  • 1 cup shredded cheese
  • 1 egg

Instructions

  1. Heat oven to 350F.
  2. Chop up your turkey into small pieces and set aside.
  3. In a pan on medium heat, add olive oil and onions. Cook for 3-4 minutes until they’ve softened before adding in the garlic and turkey. Cook until the turkey is heated through, up to 5 minutes. Set aside.
  4. Using a 5″ bowl as a template, cut out circles in your puff pastry (or just cut into 4 squares).
  5. Place your filling into the sheets and top with shredded cheese. Fold the puff pastry in half, sealing the edge with a fork.
  6. Brush the top of the hand pie with an egg wash (one egg beaten and mixed with 1 tbsp of water).
  7. Place the hand pies onto a sheet of parchment paper in a sheet pan and then put it in your oven.
  8. Bake for 15 minutes or until the pastry is golden brown.
