These leftover turkey samosas stuffed with cheese and cranberry sauce is the ultimate leftover turkey recipe. Let's face it, anything wrapped in crisp pastry and fried until golden is a winner and these golden brown samosas are no different.

Ingredients
- 4 cups cooked turkey shredded
- 3 cups grated cheese
- 4 tbsp cranberry sauce
- 1 tsp garlic powder
- 1 tsp onion powder
- 2 tsp dried sage
- 1 tsp salt
- 1 tsp black pepper
- 20 samosa wrappers
- 3 tbsp flour
- 2 tbsp water
- oil for frying
Instructions
- Combine all the ingredients for the filling in a large bowl, taste and adjust seasoning if necessary.
- Lay the samosa pastry out in front of you, lengthwise.
- Add a spoonful of filling to the bottom of the pastry then make a few diagonal folds to encase the filling in the pastry.
- Mix the flour and water together and use a little of the paste to seal the edges.
- Heat neutral oil in a medium-sized pot over medium-high heat and once hot, add the samosas in batches.
- Cook for 4-5 minutes until golden brown on both sides.
- Remove from the oil with a slotted spoon and allow to drain on paper towel.
- Serve with dipping sauce of your choice.
