Leftover Turkey Stir Fry

Stir fry with leftover holiday turkey is a great way of repurposing your leftover meat and veggies!

Ingredients

  • 1 cup uncooked brown rice I used short-grain
  • 1 large crown broccoli chopped into florets
  • ½ red onion sliced
  • 1 red bell pepper cut into matchsticks
  • 1 cup hedgehog or oyster mushrooms
  • 5 cloves garlic minced
  • 1 tablespoon fresh ginger peeled and grated
  • ¾ teaspoon sea salt to taste
  • 1-½ cups to 2 roasted turkey chopped or shredded
  • Sesame seeds for garnish

Instructions

  1. Cook the rice according to package instructions.
  2. While rice is cooking, heat coconut oil in a large skillet over medium-high heat. Add the onion and saute 5 minutes, stirring frequently, until onion begins turning translucent.
  3. Add the broccoli and red bell pepper and cover with a lid, stirring occasionally, until vegetables have softened yet are still al dente, about 5 to 8 minutes.
  4. Add the mushrooms, garlic, and ginger, and continue cooking until garlic and ginger are very fragrant, about 3 minutes.
  5. Add the turkey, cover, and cook until heated through, about 3 minutes. Add sea salt to taste and serve over cooked rice. If desired, drizzle with soy sauce, teriyaki sauce, or liquid aminos.
