- 1 tablespoon olive oil
- ½ cup chopped yellow onions
- 2 celery stalks chopped
- 1 cup chopped red bell pepper
- 3 garlic cloves
- ½ lemon sliced
- 2 tablespoons chopped basil 4-6 leaves
- ¼ teaspoon ginger paste
- ½ teaspoon dried oregano
- ½ teaspoon dried thyme
- 1 teaspoon salt
- ½ teaspoon ground black pepper
- ¼ teaspoon paprika
- 1 cup chopped carrots
- 8-10 cups chicken broth
- 4 cups cooked chopped chicken breast
- 8 ounces egg noodles
Instructions
- Warm oil over medium high heat in a large pot.
- Saute onions, celery, and red bell pepper until softened. (3-4 minutes.)
- Add in garlic, cook 30 seconds, stir in herbs, seasonings, and carrots. Cook an additional 30 seconds before pouring in carrots, chicken broth, and sliced lemons.
- Bring soup to a gentle boil and allow to cook for ten minutes before adding in the chicken and egg noodles.
- Cook until egg noodles have softened.
- Taste for seasonings and serve.
