Lemon Cake Mix Cookies
Lemon Cake Mix Cookies use a lemon cake mix base combined with butter, cream cheese, egg, and lemon extract to create soft, tangy cookies. After chilling the dough, balls are rolled in powdered sugar and baked to a light golden exterior with a tender interior. Ingredients
- 1/2 cup butter softened
- 8 ounces cream cheese softened
- 1 egg
- 1/2 teaspoon lemon extract flavor
- 1 box lemon cake mix
- 1/2 cup powdered sugar
Instructions
- In a large mixing bowl, beat together the butter, cream cheese, egg, and lemon extract with an electric mixer until smooth.
- Add the lemon cake mix and mix until well incorporated.
- Cover the cookie dough in the bowl and chill in the refrigerator for 30 minutes.
- While the dough is chilling, preheat the oven to 350F.
- Roll the dough into 1-inch balls, roll each in the powdered sugar, then place on cookie sheets greased with non-stick cooking spray. Leave at least 2 inches of space between each cookie.
- Bake the cookies at 350F for 12-13 minutes until set. Cool the cookies on the baking sheets for 2 minutes, then transfer to a wire cooling rack to cool completely. Dust with additional powdered sugar if desired.
