Lemon Cake Mix Cookies

Lemon Cake Mix Cookies use a lemon cake mix base combined with butter, cream cheese, egg, and lemon extract to create soft, tangy cookies. After chilling the dough, balls are rolled in powdered sugar and baked to a light golden exterior with a tender interior. These cookies have a bright citrus flavor and a smooth texture, ideal as a refreshing treat.

Description

The cookie dough is made by creaming together softened butter, cream cheese, egg, and lemon extract until smooth, then incorporating lemon cake mix. Chilling the dough for 30 minutes firms it, making it easier to shape. The dough is rolled into one-inch balls, coated in powdered sugar, and placed spaced on greased cookie sheets. Baking at 350°F for 12 to 13 minutes results in cookies that are set with a soft, slightly chewy texture.

The lemon flavor is prominent due to the cake mix and lemon extract, while the cream cheese contributes to a moist, tender crumb. Powdered sugar coating adds sweetness and slight texture contrast on the outside. Cooling on wire racks after baking prevents overcooking and maintains the cookie’s soft interior.
