This recipe for Lemon Chicken Skewers features marinated chicken breast cubes threaded with slices of fresh lemon and grilled or cooked in a skillet until golden and cooked through. Ingredients
- 2 lemon organic
- 5 tablespoon extra-virgin olive oil
- 800 g chicken breast cut into 2 cm cubes
For the yogurt dip:
- 200 g Greek yogurt regular or dairy-free
- 1 garlic grated, clove
- 1 teaspoon lemon zest organic
- salt sea salt and freshly grated pepper
- black pepper sea salt and freshly grated pepper
Instructions
- Cut one lemon into thin round slices and set them aside.
- In a large bowl, add the chicken cubes, 4 tablespoons of oil, the juice of one lemon, and a generous pinch of salt, and mix all the ingredients.
- Thread the chicken cubes onto metal skewers alternating with folded slices of lemon.
- Cook the chicken lemon skewers on a hot grill or cast iron skillet, turning them often for 5-10 minutes, or until the chicken is cooked through and golden brown.
- Meanwhile, in a small bowl, mix the yogurt with the grated garlic, the lemon zest and 1 tablespoon of oil, and season with salt and pepper to taste.
- When ready, transfer the lemon chicken skewers onto a serving dish and serve them with the yogurt sauce.
Notes
- If a grill or skillet is not available, bake the skewers in a preheated oven at 180°C (360°F) for 20–30 minutes as an alternate cooking method.
