Lemon Couscous
Lemon Couscous features fluffy couscous soaked in savory chicken or vegetable broth and enhanced with fresh lemon juice and herbs. The dish offers a light, fresh flavor with a delicate texture, suitable as a side dish to many meals. Optional red pepper flakes provide a mild heat contrast, while olive oil adds richness.
Ingredients
- 1 cup couscous
- 1 1/2 cups chicken broth or vegetable broth, low-sodium
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon lemon juice
- 2 tablespoons parsley freshly chopped
- 2 tablespoons basil optional, freshly chopped
- kosher salt to taste
- black pepper to taste, freshly ground
- Pinch red pepper flakes optional and to taste
Instructions
- In a rice colander rinse the couscous under cold water until water runs clear, and drain well.
- Place a medium saucepan over medium heat, add the broth, and bring it to a boil.
- Next, add couscous, stir, and then cover with a lid and remove from heat. Let it sit covered for 10 minutes. Then uncover and use a fork to fluff it up.
- After that, stir in the olive oil, lemon juice, and fresh herbs. Season with salt, pepper, and red pepper flakes to taste.
- If desired, sprinkle some freshly grated parmesan on top and serve.
