  • 1 cup couscous
  • 1 1/2 cups chicken broth or vegetable broth, low-sodium
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon lemon juice
  • 2 tablespoons parsley freshly chopped
  • 2 tablespoons basil optional, freshly chopped
  • kosher salt to taste
  • black pepper to taste, freshly ground
  • Pinch red pepper flakes optional and to taste

Instructions

  1. In a rice colander rinse the couscous under cold water until water runs clear, and drain well.
  2. Place a medium saucepan over medium heat, add the broth, and bring it to a boil.
  3. Next, add couscous, stir, and then cover with a lid and remove from heat. Let it sit covered for 10 minutes. Then uncover and use a fork to fluff it up.
  4. After that, stir in the olive oil, lemon juice, and fresh herbs. Season with salt, pepper, and red pepper flakes to taste.
  5. If desired, sprinkle some freshly grated parmesan on top and serve.
