Lemon Couscous

Lemon couscous is a quick and simple side dish. Made in 8 minutes, this easy couscous dish is full of fresh lemony flavour.

Ingredients

  • 1 cup chicken stock boiling hot (see my notes)
  • 1 cup couscous (instant/fine grain)
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon finely grated lemon zest
  • 2 garlic cloves crushed
  • 1 tablespoon salted butter
  • ¼ teaspoon cooking salt
  • chopped parsley optional garnish

Instructions

  1. In a large heatproof bowl combine couscous, lemon juice, lemon zest, garlic, butter and salt.
  2. Pour over boiling chicken stock and stir to melt the ingredients together, making sure all of the couscous is covered with stock.
  3. Immediately cover bowl tightly with plastic wrap and allow to stand for 3 minutes (see my notes).
  4. Remove the plastic wrap, fluff couscous with a fork and serve garnished with chopped parsley (if using).

Notes

  • *Please note that the amount of calories per serving and nutrition information is provided as a guide only, as ingredients and cooking methods can vary greatly*
  • I use a microwave to heat the chicken stock while preparing the other ingredients. You could also heat the stock in a small saucepan on the stovetop.
  • Standing time may vary depending on the brand of couscous you are using. Refer to the package directions for the recommended standing time.
