Lemon Cream Cheese Bars Recipe

Ingredients

  • 24 vanilla wafers crushed
  • 1/2 cup all-purpose flour
  • 1/4 cup brown sugar packed
  • 1/4 cup butter cold
  • 8 oz cream cheese softened
  • 1 cup sugar
  • 2 eggs
  • 2 tbsp all-purpose flour
  • 2 tbsp lemon zest divided
  • 1/4 cup lemon juice freshly squeezed
  • 1/4 tsp baking powder

  1. Line a 9x11 inch baking pan with parchment paper over sides of pan.
  2. If you want the wafer crumbs fine, place in a food processor or place in a Ziploc bag and crush with a rolling pin.
  3. In a bowl, combine wafer crumbs, ½ cup flour and brown sugar. Cut in butter until mixture crumbles; press firmly onto bottom of your pan. Bake at 350 for 15 min.
  4. In the meantime, beat cream cheese and sugar with electric mixer until blended. Add your eggs and flour; mix well. Blend in lemon juice, baking powder and half the lemon zest;
  5. Pour over crust. Bake for 25 to 28 minutes or until center has set. Cool completely.
  6. Cover and refrigerate at least 2 hours. Sprinkle with powdered sugar and remaining lemon zest.
