Lemon Dill Cod in Parchment Paper with Capers

Ingredients

  • 1 1-pound cod , cut into 4 fillets
  • 4 tsp avocado oil or melted butter
  • 2 tsp paprika
  • 1 tsp garlic powder
  • 1/2 tsp sea salt
  • 1 lemon thinly sliced
  • 4 sprigs fresh dill
  • 4 Tbsp capers

Instructions

  1. Preheat the oven to 350 degrees F. Cut 4 sheets of parchment paper and place on a large baking sheet. 
  2. Cut cod into four fillets and place on squares of parchment paper. Sprinkle each fillet with paprika, garlic powder and sea salt.
  3. Layer lemon slices over each fillet. Place sprigs of dill on each fillet and sprinkle with 1 tablespoon of capers each.
  4. Form packets by folding parchment over the fish and tying the ends with twine.
  5. Place all four packets onto a large baking sheet and bake for 35 to 40 minutes, or until cod is cooked through.
  6. Serve with choice of side dishes.
