Ingredients

  • 3 tablespoons butter
  • Juice of one lemon
  • 4 minced garlic cloves
  • ¼ cup fresh oregano chopped
  • 1 teaspoon fresh Rosemary chopped
  • 1 teaspoon fresh thyme chopped
  • 1 pound boneless skinless chicken thighs or breasts
  • salt and pepper to taste
  • ½ bunch asparagus cut in half

Instructions

  1. In a medium-sized skillet over medium-high heat add 3 tablespoons butter until melted. Add juice of one lemon, 4 minced garlic cloves, ¼ cup fresh oregano, 1 teaspoon fresh rosemary, and 1 teaspoon fresh thyme.
  2. Add 1 pound boneless skinless chicken thighs and cook for 3-4 minutes on each side or until chicken is no longer pink and is 165 degrees Fahrenheit. Remove chicken and set aside on a plate.
  3. Add ½ bunch asparagus to the pan and salt and pepper to taste. Cook for 5-6 minutes or until tender.
  4. Add chicken back to the pan for a minute or so and serve.
