Ingredients
- 3 1/2 cups water
- 1 cup granulated sugar or sugar substitute like xylitol or monk fruit
- 3/4 cup lemon juice fresh
- 2 tablespoons lemon zest
- mint optional
- Blueberry optional
Instructions
- Put water in a medium saucepan and heat on high until the water boils. Add the sugar and stir until it dissolves. Remove from heat and add lemon juice and zest. Freeze in a heat proof bowl. Remove from freezer and beat until fluffy with a whisk or hand blender. Serve with sprigs of mint leaves and blueberries (optional).
