Lemon Meringue Pie

Ingredients

Pie Crust:

  • 1 1/4 cups flour
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter , frozen and diced
  • 1/4 cup ice water

Lemon Meringue Pie:

  • 1 cup sugar
  • 2 tablespoons flour
  • 3 tablespoons cornstarch
  • 1/4 teaspoon salt
  • 1 1/2 cups water
  • 1/2 cup lemon juice , fresh
  • 1 tablespoon lemon zest
  • 2 tablespoons unsalted butter
  • 4 large eggs , separated whites from yolks
  • 1/3 cup sugar

Instructions

Pie Crust:

  1. Preheat oven to 350 degrees.
  2. Add the flour, salt, and butter to a food processor and pulse, adding the water (I spoon the water directly out of the cup of ice water directly into the food processor to make sure it is still ice cold) through the chute one tablespoon at a time until the dough begins tiny crumbles (don't let it become a ball).
  3. Roll into a circle, and press into pie tin.
  4. Top with parchment paper, add beans or pie weights to weigh down.
  5. Bake for 35-40 minutes, then remove and let cool.

Lemon Meringue Pie Filling:

  1. Preheat oven to 350 degrees.
  2. In a large saucepan add 1 cup sugar, flour, cornstarch, salt, water, lemon juice and lemon zest, stirring well.
  3. Heat on medium-high and stir nonstop until mixture comes to a boil.
  4. Turn off and remove from heat, stir in butter and let cool for 5 minutes.
  5. Quickly whisk in the 4 egg yolks (not the whites) and keep whisking until smooth.
  6. Add egg whites to a stand mixer on high speed until foamy, then add in the 1/3 cup sugar and keep beating until eggs reach stiff peaks.
  7. Pour lemon curd into the cooked pie crust and top with egg white meringue.
  8. Cook for 10 minutes, remove and let cool to room temperature.
  9. Refrigerate for at least 4 hours before slicing.
