Lemon Pie Filling Recipe

Lemon pie filling is one of the best things about lemon meringue pie! It’s tart, tangy, and just sweet enough.

Ingredients

  • 1/4 cup concentrated lemon juice
  • 1 1/2 cups sugar
  • 1/3 cup cornstarch
  • 1 1/2 cups cold water
  • 1 egg

Instructions

  1. In a small saucepan, mix together the water and cornstarch.
  2. When the cornstarch dissolves, add the sugar, lemon juice, and a slightly beaten egg.
  3. Cook over medium heat, stirring constantly until the mixture thickens and comes to a boil.
  4. If using food coloring, add it in this step.
  5. Remove the thickened lemon mixture from the heat.
  6. Let the filling cool before using.

Notes

  • This recipe yields enough filling for 1 lemon pie.
