Lemon Posset Recipe

Thick and creamy lemon posset topped with fresh berries or a berry sauce. This simple recipe has perfect amount of tang and sweet flavors with a silky texture.

Ingredients

Servings
  • 2 cups heavy cream
  • 2/3 cups granulated sugar
  • 1 tablespoon lemon zest
  • 6 tablespoons lemon juice 2-3 lemons

Instructions

  1. In a medium size saucepan add the heavy cream, sugar and lemon zest. Combine ingredients and over medium heat bring to a boil.
  2. Continue to cook for about 10 minutes or until the mix is reduced to 2 cups. Keep a close eye to make sure the mix does boil over. Reduce the heat slightly if it gets too hot.
  3. Remove from heat and add lemon juice. Stir to combine and let come to room temperature for 20 minutes.
  4. Strain to remove the lemon zest (optional) and divide into individual serving dishes. Refrigerate for 3 hours or until set. Cover with plastic wrap until ready to enjoy.
  5. Top with fresh berries or blueberry sauce.

Notes

  • For a sugar free lemon posset add 1/3 cup of monk fruit and 1/3 cup of allulose or 2/3 cup of your favorite sugar alternative.
