Lemon Posset Recipe

Thick and creamy lemon posset topped with fresh berries or a berry sauce. This simple recipe has perfect amount of tang and sweet flavors with a silky texture.

Ingredients
- 2 cups heavy cream
- 2/3 cups granulated sugar
- 1 tablespoon lemon zest
- 6 tablespoons lemon juice 2-3 lemons
Instructions
- In a medium size saucepan add the heavy cream, sugar and lemon zest. Combine ingredients and over medium heat bring to a boil.
- Continue to cook for about 10 minutes or until the mix is reduced to 2 cups. Keep a close eye to make sure the mix does boil over. Reduce the heat slightly if it gets too hot.
- Remove from heat and add lemon juice. Stir to combine and let come to room temperature for 20 minutes.
- Strain to remove the lemon zest (optional) and divide into individual serving dishes. Refrigerate for 3 hours or until set. Cover with plastic wrap until ready to enjoy.
- Top with fresh berries or blueberry sauce.
Notes
- For a sugar free lemon posset add 1/3 cup of monk fruit and 1/3 cup of allulose or 2/3 cup of your favorite sugar alternative.
