Lemon Pound Cake

Ingredients

  • 1 cup butter
  • 1 cup sugar
  • 4 eggs
  • 1 tablespoon vanilla
  • 1 lemon juiced and zested
  • 2 cups flour
  • ½ teaspoon salt

Instructions

  1. Preheat oven to 350ºF.
  2. With a hand mixer or electric mixer, whip the butter until loosened, about 30 seconds.
  3. Add the sugar, whip again until light and fluffy, about 2 more minutes.
  4. Add the eggs, one at a time, whipping for about 1 minute between additions.
  5. Whip until light and fluffy, about 2 more minutes.
  6. Add the vanilla, lemon juice, lemon zest, salt, and flour.
  7. Mix gently, until just combined.
  8. Spray a single loaf pan. I use standard size loaf pans, either 9×4 inches or 10×5 inches.
  9. Pour the batter into the loaf pan.
  10. Bake for about 60 minutes, until a toothpick comes out clean.
