Lemon Rice

Ingredients

  • 2 cups chicken broth
  • 1 cup long grain rice, uncooked
  • 1 tablespoon butter
  • 1/4 teaspoon garlic powder
  • 1 lemon zested (I like it lemony! Add less or more to your liking)
  • 2 tablespoons lemon juice (about one lemon)
  • fresh basil to garnish (optional)

Instructions

  1. In a medium pot with a lid, combine the chicken broth, rice, butter, garlic powder, lemon juice, and lemon zest.
  2. Bring to a boil, then reduce the heat to a simmer.
  3. Cover the pot and allow the rice to simmer slowly for 20 minutes, or until liquid is absorbed.
  4. Fluff with a fork, season with salt if needed, and garnish with fresh minced basil.
