Ingredients

The Slaw:
  • ¾ pound Shrimp peeled & deveined
  • 2 teaspoons olive oil
  • 2 teaspoons chopped fresh rosemary
  • 1 teaspoon lemon zest
  • ¼ teaspoon salt
  • ¼ teaspoon ground pepper
  • 10 ounces packaged broccoli slaw such as Trader Joe's (5 cups)
  • 3 tablespoons slivered almonds toasted
The Dressing:
  • 2 tablespoons fresh lemon juice
  • 1 garlic clove grated on a microplane
  • 2 teaspoons agave nectar or honey
  • 1 teaspoon chopped fresh rosemary
  • ⅛ teaspoon salt
  • 3 tablespoons extra virgin olive oil

Instructions

  1. Preheat the oven to 500 degrees F.
  2. In a medium bowl, toss the shrimp, olive oil, rosemary, lemon zest, salt and pepper.
  3. Transfer the shrimp to a baking sheet and arrange in a single layer.
  4. Roast until the shrimp are just cooked through, 3 to 4 minutes.
  5. In a large bowl, combine the broccoli slaw, roasted shrimp, almonds and dressing. Toss to combine. Serve.
The Dressing:
  1. In a small bowl, whisk together the lemon juice, grated garlic, agave nectar, rosemary and salt. Whisk in the olive oil.
