Lemon Salad Dressing Recipe (Lemon Vinaigrette)

This Lemon Salad Dressing is a vinaigrette made by shaking fresh lemon juice, avocado oil, white vinegar, honey, Dijon mustard, and minced garlic together until creamy. Chives are an optional addition for mild onion flavor. The dressing stores well in the fridge and maintains consistency due to the choice of oil.

Ingredients

  • 2 lemon about ½ cup lemon juice, plural
  • ½ cup avocado oil see notes
  • 1 tablespoon white vinegar
  • 1 tablespoon honey
  • 2 teaspoons Dijon mustard
  • 1 clove garlic finely minced
  • 1 teaspoon chive optional, minced

Instructions

  1. Add all the ingredients to a 2-cup mason jar.
  2. Shake it until the dressing begins to look creamy, about 1 minute. Store the dressing in the jar in your fridge for up to 10 days.

Notes

  • Avocado oil keeps the dressing fluid in the fridge; if using olive oil, warm the dressing and shake well before using.
  • Store the dressing in a sealed jar in the refrigerator for up to 10 days for best freshness.
